This recipe is perfect for summer time events! Typically I bring bake goods for my “dish to pass” but it is a little difficult in the summer time, also cookies and cake are kind of heavy when it’s hot. This salsa is an awesome alternative to a boring fruit tray and it looks gorgeous!
What you’ll need:
Salsa:
1 pound of strawberries
4 kiwi
2 mango
1 pineapple
1/2 of a lemon
Chips:
1 bag of soft tortilla shells (about 30 taco size shells)
1/2 cup butter
1 tablespoon cinnamon
3 tablespoon sugar
Dice up the strawberries, kiwi, mango, and pineapple. Mix all of the fruit together in a big bowl then add the juice of half a lemon.
Cover the fruit and refrigerate.
Preheat the oven to 350 degrees F. Cut the tortilla shells into sixths.
Line the pieces up on a cookie sheet.
Melt the butter in the microwave and brush over the tortillas. In a small bowl mix the cinnamon and sugar together and sprinkle over the shells. Place in the oven for about 15 minutes (until golden brown).
Take the chip out and let them cool. Store in a zip lock bag.
To serve to a large group scoop salsa into individual cups. Enjoy!
